Looking for a quick and easy snack, that's not only healthy, but also rich in protein? One that helps you tick one more portion of vegetables off your daily 'to eat' list? Then why not try edamame, (/ay-duh-MAH-may/)? It's a soybean that is high in protein, and tasty when boiled and seasoned with a little salt. It makes a great snack, ready to eat in a matter of minutes, and requires no other ingredients, which makes it perfect for that quick snack before the school run, or as an in-between meal to keep your energy up mid morning. Right now, many supermarkets are selling the beans frozen, and some even produce fresh edamame bean salads in their fresh salad pot ranges. Pick one up as a snack on the run or as an addition to your office lunch. I often eat one of these pots with a breast of chicken in the evening, whcih saves me time on preparing vegetables or a salad. Edamame is a good source of protein, vitamin c, fibre and folic acid. In Japan they are so popular that although the country produces around 53,000 tons of the beans a year, it cannot grow enough to feed its own market! Try them for yourselves. If you're eating out, pop into a quality Japanese restaurant and order them from the menu. If you've yet to try them I think you'll like them...
